- 1 bag of small red potatoes
- 4T butter
- 1 c buttermilk
- 1 cup Italian Blend cheese
- salt and pepper; to taste
- 6 green onions, sliced
- Clean the potatoes and boil until fork-tender.
- Drain them and return them to the stove on low heat.
- Add the butter and buttermilk, and smash until they are the consistency you want.
- Stir in the cheese, salt, and pepper.
- Top with green onions and serve.
