- 6 slices maple bacon, diced
- one medium onion, diced
- one box frozen spinach, thawed
- 6 eggs
- 1 cup shredded cheddar cheese
- 4 oz herbed cream cheese
- salt & pepper to taste
- Dice the bacon and toss it in the skillet to start getting tasty and crispy.
- While it’s sizzling away, dice the onion and toss the spinach in the microwave to thaw.
- When the bacon is done, remove with a slotted spoon and deposit to some paper towel to soak up some of the extra grease.
- Pour off the grease from the pan (but not the tasty bits on the bottom!) and toss in the onions. Use them to scrape up the bacony, charred, yummy goodness from the bottom of the pan. Cook for about 5 minutes, until tender. If you’re brave, add a little dry white wine to finish deglazing the pan.
- Remove the spinach from the microwave and squeeze out the extra water.
- Beat the eggs together with the cheeses, s&p.
- Take out a glass pie pan, add a little non-stick cooking spray, and toss in the bacon, spinach, and onions.
- Pour the egg mixture over the yummy goodness and bake at 400 for 20-25 minutes (til a knife comes out clean from the center).
- Remove, cut, add a dash of Tabasco sauce (if that’s your thing), and enjoy!
- Super tasty brunch or dinner!
