From That Skinny Chick Can Bake

  • 8 eggs
  • ½ cup milk
  • 2 tablespoons flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • A pinch of red pepper flakes, optional
  • 3 7-ounce cans of whole green chilies, split open
  • 1 pound shredded cheese, I used mild white cheddar
  1. Grease an 8 x 8 or 9 x 9 inch pan (or similar sized casserole dish).
  2. Beat together, eggs, milk, flour and seasonings.
  3. Layer a third of the chilies, then a third of the cheese and repeat.
  4. Pour egg mixture over cheese.
  5. Let rest for about a half hour while you preheat the oven to 350º.
  6. Bake for 40-45 minutes, Let sit 20 minutes before serving

German Potato Casserole

German Potato Casserole | Sarafina's Kitchen

  • 1 can  (10-3/4 oz.) condensed cream of potato soup
  • 1-1/2 cups  sour cream
  • 3 Tbsp.  white vinegar
  • 1 pkg.  (32 oz.) frozen Southern-style hash browns, thawed
  • 1 pkg.  (8 oz.) shredded Swiss cheese
  • 8 slices  cooked bacon, crumbled, divided
  • green onions, sliced, divided
  • 2 cups  French fried onions
  1. Heat oven to 350ºF.
  2. Mix soup, sour cream and vinegar in large bowl until blended. Add hash browns, cheese, half the bacon and 1/2 cup green onions; mix lightly.
  3. Spoon into 13×9-inch baking dish sprayed with cooking spray.
  4. Bake 50 min. or until heated through, topping with French fried onions after 20 min. Sprinkle with remaining bacon and green onions

Slow Cooker Tater Tot Casserole

  • 1 lb. ground turkey, browned
  • 10 oz. tomatoes, RoTel, mild or hot, drained
  • 16 oz. tater tots, frozen
  • 10 3/4 oz. can, Low-Fat Cream of Celery soup
  • 1 onion, diced (about 1 cup)
  • 2 c. shredded cheddar cheese
  1. In a skillet, brown ground turkey, adding in chopped onion, and Rotel tomatoes.
  2. Transfer turkey, onion and tomato mixture into a greased slow cooker.
  3. Combine above with Cream of Celery soup.
  4. Place tater tots across the top of all your ingredients listed above.
  5. Cover.  Cook on Low for 2 – 3  hours.
  6. Top with shredded cheese on top of the tater tots 30 minutes before you are going to serve, allowing the cheese to melt over the tots.
