Shrimp Creole

Meagan Main Course

This is my grandmother’s recipe. I hope you enjoy it as much as our family does.


1 tablespoon roux
2 tablespoons olive oil
1 clove garlic — chopped
1/2 cup onion — chopped
1/4 cup green onion — chopped
1/2 cup celery — chopped
1/3 cup bell pepper — chopped
1/4 cup parsley — chopped
1 teaspoon lemon juice
1 1/2 pounds shrimp — deveined
1 1/2 cups water
8 ounces tomato sauce
14 ounces can tomatoes — diced
6 ounces can tomato paste
1 bay leaf
1/4 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
dash – hot sauce
dash – cayenne


Sauté garlic, onion, bell pepper, green onion, celery, and parsley in roux and olive oil until tender.
Mix remaining ingredients in a bowl and add at once.
Simmer for about an hour.
Add deveined shrimp.
Cook about 15 minutes more.
Serve over rice.
