If you’re looking for a healthier version of smashed potatoes, try using Greek Yogurt in place of the sour cream. It has almost the same flavor and contains less fat and more protein. You won’t feel so guilty going back for another spoonful.
- 2 lb small red potatoes
- 2 c Greek Yogurt
- 2/3 oz fresh chives (one package)
- 2-3 cloves of garlic, diced or minced
- salt & pepper to taste
- Clean and boil potatoes until fork-tender.
- Drain and return to the pot.
- Add the yogurt and start mashing them to your desired consistency.
- Stir in the chives and garlic. If you prefer a milder garlic flavor, sauteé it first, or use only 1 clove.
- Add s&p to taste
