1/2 small white onion
1 clove garlic
2 tbl fresh oregano leaves
grated zest of one large lemon
1 package (10 oz) frozen chopped spinach, thawed and water squeezed out
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup crumbled feta cheese
1 tbl fresh lemon juice
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

In the workbowl of a food processor fitted with a metal blade, process the onion, garlic, oregano, and lemon zest until finely minced. Add the spinach and pulse several times until finely chopped. Add the mayonnaise, sour cream, feta cheese, lemon juice, salt and pepper. Process just until the dip is well mixed but not puréed smooth. Taste and adjust the seasonings. Transfer to a serving bowl and serve immediately.

Note: This dip can be prepared up to one day in advance. Cover and refrigerate. Remove from the refrigerator 20 minutes before serving.
